Lunch Salad

Lunch
Often a conundrum when you are looking for mid-day nourishment,
in the house,
alone,
on a Thursday.
Do you ever open the fridge and start throwing everything you see in a bowl? If you haven't, you should. More often than not, these salads turn our better than one might expect.
I do this rather often and one such particular medley came together rather nicely for me on a recent Thursday. I started out with a few basic staples and turned into something one might be able to pass as a ~ recipe. Recipe is probably going too far, but definitely a combination to write down.
This particular combination featured the Bruschetta Topping from Trader Joe. If you haven't used this product 5 different ways by now - get going.
Most of what went into today's salad were leftovers from other meals. Tuna from last nights tuna melts (try melts on tortillas instead of bread and your teenage boys will think it's a game-changer), peppers and onions pre-chopped but not used in the sausage gravy, black olives and arugula were pizza topping choices last Saturday, cucumber and greens from last night's salad because it feels right offering greens with dinner to offset the calories from the homemade Mac & cheese served last night.
These items complimented each other perfectly and turned out to be a stellar little salad. Not rocket science, but a newish way to use tuna all the same.
Here are the ingredients I used, but no structured recipe as these types of lunches are all about tossing things together in a bowl in the order and amounts you prefer.
To make this for yourself, decide your amounts based on the size bowl you're eating from. To make this as a side for tonight's dinner, start with the serving bowl of your choice and fill to capacity.
